The Veggie Toss
If you are looking for a healthy snack or side dish, why not roast some veggies. Cut your favorite vegetable into reasonable sizes. I love using broccoli or french string beans. You will need the following ingredients:
- Veggies (carrots, broccoli, brussel sprouts, french string beans are my favorite)
- Olive oil (feel free to use other oils just keep in mind you don’t want to lose the taste of the vegetable)
- Salt and pepper (cayenne pepper for those with a sense of adventure)
- Parmesan cheese
Make sure that your vegetables are clean and dry. Cut them into bite sizes or larger for the sake of presentation. Sprinkle them with olive oil. Make sure that they are coated entirely but not swimming in oil. Soggy broccoli is not our goal. Add salt and pepper to your liking then roast 400 degrees until they can be easily pierced with a fork. DO NOT OVERCOOK. Remove from oven, sprinkle with parmesan cheese and enjoy. Salt and pepper can also be added after removing from the oven. Don’t be afraid to use your imagination and try other herbs and spices. This recipe also works on potatoes and mushrooms.
