Spice Up Your Spinach
Chefs, you may need to spice up your spinach. Trying to get my nephew to eat spinach when he was little was like pulling teeth. It tasted like dirt (his words), felt funny in his mouth, and it was too green. Now understand this is a kid who thought that any green food was salad or pickles and all white food was ungins (onions). Although he learned the actual names of green and white vegetables, spinach was still out of the question until I challenged him. I bet him that he would love my spinach over his mom’s and the rest and the recipe was quite simple.
You will need…………..
Freshly washed spinach, whole leaves or chopped (I prefer whole leaves)
Canola, Olive or Grapeseed oil (the oil should be light)
Freshly very finely chopped onions, garlic puree or paste, basil, parmesan cheese or your favorite aromatic herb or spice (or all three)
No stick frying pan
Add a few dashes of oil to your skillet. Once the oil is hot, add your garlic or favorite herb or aromatic, a pinch of salt and pepper and toss until done. ( the leave will be limp and wilted). The reason I did not include measurements is because this a a “by sight & taste preference” recipe. You know what you like so let your eyes be your guide, then dig in.
